A couple of weeks ago a Food article in the Toronto Star caught my attention. Karon Liu profiled a Canadian Winter Salad he calls the CanCon Salad with all produce grown in Canada. What a great idea for Community Kitchens. It also included a “2-Minute Mayonnaise” recipe using Canola oil (a portmanteau of “Canada” and “Oil” when the name was registered as a trademark in 1978). Shopping for ingredients was easy and all available at Peacocks.
Thanks Rick and staff for displaying the Canadian flag on produce and products making shopping Canadian easier. One surprise is the number of leafy greens grown in hydroponic greenhouses in Ontario and Quebec with brands such as Good Leaf and Gen V carried at Peacocks and other grocery stores.
The Meeting Place (TMP) is hosting three Community Kitchens events this spring and on Friday, March 7th eight of us enjoyed making the CanCon salad and the “2 Minute Mayo” was just that – easy and perfect. The salad was different in that it mixed leafy greens, root vegetables and hearty beans for a unique taste. We’ll put the CanCon salad recipe up on TMP website soon.

Easy to prepare, nutritious and a change from the usual. If you have not tried a Good To Go Meal kit this is an opportunity to try one.
